Easy Spanish Rice

Easy Spanish Rice is a great side dish for tacos or burritos. 

I've been making this Spanish Rice for several years.  I was looking for something quick and easy that didn't use instant or minute rice and this one fit the bill.  It takes less than 30 minutes from start to finish.  You can find the original recipe on the Betty Crocker website.  I've changed a few things because I found the proportions for the water and tomato sauce made the rice sloppy.

This is a mild rice dish so if you like it hotter feel free to swap out some of the sweet green peppers for peppers with some heat.

Easy Spanish Rice

  • 1 cup regular long-grain rice 
  • 1 medium onion, chopped (about ½ cup) 
  • 2 tablespoons vegetable oil 
  • 1 clove garlic, minced or ⅛ teaspoon garlic powder 
  • 1½ cups water 
  • 1 can (8 ounces, about 1 cup) tomato sauce 
  • 1 small green bell pepper, chopped (about ½ cup) 
  • 1½ teaspoons salt or 1 vegetarian chicken bouillon cube 
  • 1 teaspoon chili powder 
How to make it:
Cook rice and onion in oil in 10-inch frying pan over medium heat about 3 minutes, stirring occasionally, until rice is golden brown and onion is tender. Add minced garlic and stir through.

Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer about 20 minutes, stirring occasionally, until rice is tender.  Remove from heat and let rice sit 5 minutes. Fluff rice and serve.

Makes 6 servings

Cook rice and onions in the oil for about 3 minutes or until the rice starts to turn golden. 

Add the garlic and stir through. I didn't have green pepper on hand but had red and green frozen so I used that which made it quite colourful.

Stir in remaining ingredients. 

The mixture will look rather soupy but the rice will absorb the liquid as it cooks. 

Bring the mixture to boil, lower heat and cover and let cook for 20 minutes.

Occasionally remove the cover and give the mixture a stir to make sure nothing is sticking. When the rice has cooked remove from heat and let sit 5 minutes.  Fluff with fork and serve.
