One-Pot Wonder Macaroni & Cheese

One-Pot Wonder Macaroni & Cheese is almost as fast as the blue box but full of real cheese and lots of flavour! The kids will love it!

I have several recipes for Macaroni and Cheese on this website.  It is one of my favourite foods.  If you have read any of those recipes you will know that I like the homemade kind and not the blue box stuff.  (It's my mother's fault.  She always said it wasn't real food.)  But sometimes you need something quick and easy.  Stomachs won't always wait the hour or so it takes to make a "real" dish of macaroni and cheese so this little recipe has come in handy.  It takes no more than a minute or two longer to make than the boxed mix and all of the preparation can be done while the macaroni boils.  That's a winner in my books.

You can double or triple this recipe if more is needed.  Do not substitute fresh milk for the evaporated milk.

One-Pot Wonder Macaroni & Cheese
  • 1 cup dry macaroni noodles
  • 1 tablespoon butter or margarine
  • ¾ cup evaporated milk, undiluted 
  • 1 cup shredded Cheddar cheese
  • Salt and pepper to taste
How to make it:
Cook macaroni in salted water according to package directions.  I like soft macaroni so I usually boil it for 10-12 minutes, depending on the brand.  

When cooked drain the macaroni and return to the pot.  Lower the heat to as low as you can.  Stir in the butter and milk.  Sprinkle in half the cheese and stir though until melted. Stir in remaining cheese and stir again until melted.  Taste and add salt and pepper to taste.  Turn off heat and let sit 5 minutes or you can serve it right away.  The sauce will become creamier upon sitting a few minutes.  

Makes 2-3 servings.


This is all it takes.  So quick and easy.

Cook the macaroni according to package directions.  I like my macaroni on the soft side so I usually boil it 10-12 minutes, depending on the brand.

 Drain the cooked macaroni and return it to the pot.

 Turn the heat to the lowest setting possible.  Stir in the butter and milk.

 Stir in the cheese half cup at a time, letting it melt each time.

Let the macaroni sit about 5 minutes for a creamier sauce.  Of course you can eat it right away!

 So quick and easy you'll think you opened a box.
