Glossy Orange Ginger Carrots

Don't wait until Thanksgiving or Christmas to make these Glossy Orange Ginger Carrots. They make a tasty addition to any dinner meal.  

I love glazed carrots and I have a couple of recipes I use regularly especially around the holiday seasons. The carrot just lends itself to glazing where its natural sweetness is intensified with a little sugar, honey or maple syrup (must try that someday) and a sprinkle of aromatic herbs or spices. 

I've had this recipe for years and have never made it until last week.  What a shame!  These carrots are delicious and can be served not only for celebration meals but for your every day dinners.  Why not add a splash of flavour to the humble carrot during the week.

I have no idea where this recipe originated. I have searched the internet and haven't found a source. The original recipe used ground ginger but I thought fresh ginger would be even nicer if you have it handy in the kitchen.

Glossy Orange Ginger Carrots
  • 2 pounds carrots,* peeled, cut, cooked and drained (see note below)
  • ¼ cup butter or margarine
  • ¼ cup thawed frozen orange juice concentrate
  • 4 teaspoons honey, more or less to taste
  • ½ teaspoon ground ginger (or 2 teaspoons finely minced fresh ginger)
  • ½ teaspoon salt
How to make it:
While carrots are cooking, melt butter in a large frying pan or wok.  Blend in the orange juice concentrate, honey, ginger and salt.  Place the pan over medium heat and bring mixture to a simmer for about 1 minute.

Add well drained carrots to frying pan and set over low heat, turning carrots until well glazed.

Makes enough to cover 2 or more pounds of carrots

*Note: If using large cooking carrots, cut in fat carrot sticks.  Baby carrots or very small carrots can be used whole.


Prepare carrots, cook and drain.

You will need frozen orange juice concentrate.  This is available in the freezer section of your grocery store with the other frozen juices and beverages.

Mix the orange juice, butter, honey, ginger and salt together in a large frying pan.  This is a deep sided pan which will accommodate the two pounds of cooked carrots.

Place the pan over medium heat and bring mixture to a simmer for about 1 minute.

Add well drained carrots to frying pan and set over low heat, turning carrots until well glazed.
