Date and Orange Muffins

Tasty Date and Orange Muffins with specks of orange zest and pieces of sweet dates in every bite.  

Here's another delicious muffin recipe that's been hiding in my files.  I haven't made these in a long while but it was worth baking these muffins just for the aroma going through the house. The scents of oranges, sugar and spice are bombarding my nostrils and I don't know if I'll be able to keep from eating the muffins hot from the oven. 

These muffins are a little unusual as they take a whole orange--skin, pith and flesh.  You have to cut up the orange and remove any seeds that may be in it but other than that it's pretty straight forward as muffin recipes go.  They bake up lovely and moist with specks of orange zest and pieces of sweet dates in every bite.

Date and Orange Muffins
  • 1 whole medium-sized orange (thin-skinned if possible)
  • ½ cup orange juice
  • ½ cup chopped, pitted dates
  • 1 egg
  • ½ cup oil
  • 1 teaspoon vanilla
  • 1½ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ⅔ cup sugar
  • ½ teaspoon salt
  • ½ teaspoon cinnamon, optional
  • ¼ teaspoon cloves, optional
How to make it:
Preheat oven to 400 degrees. Line or grease 12 muffin cups.

Wash orange thoroughly and remove any bad spots on the orange rind. Cut orange into pieces, remove any seeds that may be present, and drop pieces into blender or food processor.  Blend until rind is finely ground.  You may need to add a little of the juice to help this along. Add juice, dates, egg, oil and vanilla and pulse a few seconds in blender until mixed but the dates should still be in pieces. Sift or whisk dry ingredients into a large mixing bowl. Add the spices if using.  Make a well in the dry ingredients and pour in the orange juice mixture. Stir lightly until batter is just moistened.  There may be a few lumps left. 

Fill muffin cups ⅔ full and bake in the preheated oven about 18 minutes or until done.  Remove from pan and cool on baking rack.

Makes 12 muffins.

Fill muffin cups ⅔ full and bake in the preheated oven about 18 minutes or until done.

 Remove from pan and cool on baking rack.

Serve muffins warm or at room temperature for best flavour.
