Mini Pizza Quiche

Mini Pizza Quiche make for great appetizers, snacks or a main dish for a meal. 

Emily turned nine the end of July and Poppy and I were there to help her celebrate the happy occasion. Emily and her friends had fun at her party playing lots of inside and outside games, winning prizes and eating yummy food. Emily especially enjoyed her presents. Here she is blowing out that big number 9 on her birthday cake.  


I helped with the food and these Mini Pizza Quiche Cups proved to be a big hit with not only the kids but the adults as well.  The tart shells can be made well in advance and frozen or take the easy route and buy two dozen pre-made tart shells at the grocery store.  As for the filling it couldn't be easier.  Just mix four ingredients and spoon it into the prepared tart shells and bake.

Mini Pizza Quiche
  • 1 320-gram bag shredded Mozzarella cheese, divided (about 3 cups altogether)
  • 1 small can pizza sauce or 213 ml pasta sauce (about 7 ounces on measuring cup)
  • ½ cup whipping cream or undiluted evaporated milk
  • 2 eggs, beaten
  • Pastry for 2 crust pie or 24 store bought tart shells
        Optional Filling Ingredients
  • ¼ cup finely chopped of any of the following: onion, mushrooms, sweet green or red bell peppers, pineapple
How to make it:
Preheat oven to 400 degrees. 

Roll pastry thin and cut into twenty-four 4-inch circles.  Line standard size muffin cups with the pastry circles and blind bake for about 12-15 minutes or until just golden.  When cool enough to handle remove from muffin pan and place on a cookie sheet.  If you are using store bought tart shells leave them in the foil pans, if you wish. 

Lower oven temperature to 350 degrees. 

While the tart shells are cooling make the filling.  Remove 1 cup of cheese from the package and lay aside. Mix remaining cheese with the pizza sauce, cream and eggs.  Spoon the filling into the prepared tart shells and sprinkle with the remaining shredded cheese. Place in the preheated oven and bake about 20-25 minutes or until the middles are no longer liquid.  

Makes 24 mini quiche.


You will need 24 pre-baked tart shells.  I used a standard muffin pan to make my tart shells.  Make your own pastry or buy pre-made tart shells from the grocery store. To make the mini quiche filling all you need is shredded Mozzarella cheese, eggs, pizza sauce and cream or evaporated milk.

Mix all the filling ingredients together and spoon into the pre-baked shells. 

Sprinkle the tops with more shredded cheese and bake 20-25 minutes or until the middle is not wet.

All baked.  The middles will puff up while baking but will settle soon after they are removed from the oven.

Serve these delicious Pizza Quiches as a snack or for party nibbles. Emily and her friends loved them!
