Friendship Supper Macaroni & Cheese

A serving of Friendship Supper Macaroni & Cheese served with a garden salad and zucchini squash sauteed with onion and tomatoes.

An easy Macaroni & Cheese with a little zip from prepared mustard. 

Last week we held our monthly Friendship Supper at church. This supper is served to any community or church member who wishes to enjoy a meal together without the worry of planning, washing dishes or even buying the ingredients for the meal. We haven't been able to have our Friendship Suppers during the COVID-19 pandemic but a few weeks ago we started our suppers again. We got busy advertising and inviting our friends, neighbours and relatives to a tasty supper. You can see our poster below. 


Out menu was Macaroni & Cheese, Baked Beans, Coleslaw and Dinner Rolls. Of course we always have dessert and Verna is our Chief Fruit Salad Chef and puts together a mighty tasty treat for everyone. There's never any fruit salad left over so that speaks well for our Fruit Salad Chef. We also had a few cakes and cookies as well. 

As I mentioned above our main dish was Macaroni & Cheese which is a particular favourite of mine and many others as well. While we were eating someone asked me if this particular Macaroni and Cheese recipe was on my blog. I told them it was very similar to Penne with Cheese aka Pool Noodles and Cheese with just a little difference because of the addition of mustard. I was explaining how to make the cheese sauce and how much macaroni to use and it was sounding more complicated than it is so I decided to put it on the blog with all the ingredients measured out and pictures to help show the process. So, Ana and Nova this is for you. 😃

Friendship Supper Macaroni & Cheese
  • 2 cups elbow macaroni cooked according to package directions
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • ¼ teaspoon salt or to taste
  • ⅛ teaspoon pepper or to taste
  • 1 tablespoons prepared yellow mustard
  • 2 cups shredded cheddar cheese, divided (use mild, medium or old/sharp cheddar)
How to make it:
Grease a  1½ litre/quart casserole or baking dish. 

Cook macaroni according to package directions and drain when finished cooking.

In a saucepan over medium heat melt the butter and stir in the flour until bubbly. Slowly whisk in the milk and stir constantly until thickened and bubbles are breaking the surface. Remove from heat and add salt, pepper and mustard. Add 1 cup of the shredded cheese and stir until melted. Taste the sauce and adjust the salt and pepper if more is needed. Preheat oven to 350 degrees.

Into the greased casserole dish add half the cooked and drained macaroni. Sprinkle ½ cup cheese over and then the remaining macaroni. Pour the cheese sauce over top. Use a spoon or spatula to work the sauce down through the macaroni, if needed. Top the casserole dish with the remaining ½ cup cheese. Place in oven and bake 25-30 minutes or until bubbling and top is starting to turn golden. Remove from oven and let sit 5 minutes before serving. 

Makes 4-6 servings.
