Peanut Butter Honey Oatmeal Clusters

Quick no-cook Peanut Butter Honey Oatmeal Clusters can be finished with coconut or melted chocolate for a fast sweet treat.

I was looking through my old recipe box the other day and came across this recipe for Oatmeal Clusters that I've never made. I've had the recipe so long I don't even know where it came from but I know I copied it from somewhere or someone as the card is in my scribbled handwriting. It looked easy enough so I gave it a try and we really liked them. I think we both prefer them with a little chocolate drizzled over the top but the coconut ones are very good as well. 

These are quite similar to Lori's Peanut Butter Balls with Sprinkles that I posted back in 2015 (Where does the time go?) but different enough that I decided to post them as well.

These are quite rich with the peanut butter and honey and I find one to be quite sufficient. Others may disagree and wish to indulge in more than one at a time. đŸ˜‹ I'll leave it up to you. 

I think these would be excellent to take along on a hike or bicycle ride to replenish lost energy.

Peanut Butter Honey Oat Clusters
  • ¾ cup honey
  • ½ cup butter or margarine
  • ⅛ teaspoon salt
  • 1 teaspoon vanilla 
  • 1 cup peanut butter
  • 3 cups dry oatmeal
  • Fine coconut 
  • Chocolate chips
How to make it:
Combine the honey, butter and salt in a large saucepan and bring to a rapid boil over medium heat. Remove from burner and stir in the vanilla and peanut butter until well mixed. Stir in the oatmeal. Let cool slightly and then drop by spoonfuls on parchment lined cookie sheet. 

Form into balls and roll in fine coconut or leave clusters as they are and drizzle melted chocolate chips over top. 

Store in a covered container.

Makes about 3 dozen. 

Melt honey, butter and salt together in a large saucepan. Bring to a rapid boil.

Remove pot from burner and stir in vanilla and peanut butter until well combined.

Stir in the oats and mix well. 

Drop by spoonfuls on parchment lined cookie sheet.

The clusters can be rolled in coconut or drizzled with a little melted chocolate.
