No Bake, Super Quick Chocolate Coconut Snowballs--A Newfoundland Favourite

Chocolate Coconut Snowballs are a Newfoundland favourite! Melted chocolate chips and sweetened condensed milk make quick work of this beloved treat.

Snowballs appear on all kinds of cookie trays both homemade or purchased and can be found at just about any bridal or baby shower, church social or community gathering. There are dozens of recipes for the perfect Snowball but as taste is so subjective I leave it to the tasters to declare which one is the best. 

I personally found these snowballs to be quite nice--not too dry or wet with a smooth fudgy texture surrounding the coconut and oats. And the best part about this recipe is that there is no cooking of milk, sugar and butter. Well, you do have to melt chocolate chips with sweetened condensed milk but if you don't want to do it on the stove a microwave will suffice.

Snowballs
  • 1 package semi-sweet chocolate chips, about 2 cups (300 grams/12 oz)
  • 1 300 ml/14 oz can of sweetened condensed milk
  • 2 tablespoons butter
  • 1 teaspoon vanilla 
  • 1½ cups quick cooking oatmeal or 1½ cups graham wafer crumbs 
  • 1½ cups fine/medium unsweetened desiccated coconut 
How to make it:
Melt the chocolate chips with sweetened condensed milk and butter in a saucepan over low heat or microwave in 30 second intervals stirring until the chocolate chips are just melted. Do not overheat. When chips are melted remove from heat and stir in the vanilla. Add the oatmeal or graham wafer crumbs and coconut. Stir until all ingredients are well combined. The mixture will be quite soft but not wet. It will become firmer as the coconut and oatmeal absorb some of the moisture. Roll into balls, 1½-inches in diameter and then roll each ball in coconut to coat. Place the snowballs in an airtight container. They may be placed in refrigerator or can be frozen for later. Some people like to eat them straight from the freezer!

Makes 48 snowballs.

Keep an eye on the mixture if you are doing it on the stove as it can overheat even on a low temperature. Make sure you stir it often.

You should end up with a thick glossy, fudgy mixture. 

Remove from heat and stir in vanilla.

Stir in the oatmeal and coconut. You can use graham cracker crumbs instead of oatmeal but in these days of economizing I chose the oatmeal. I could find no distinct difference in taste using either.

When chips are melted remove from heat and add the oatmeal or graham wafer crumbs and coconut. Stir until all ingredients are well combined. The mixture will be quite soft but not wet. It will become firmer as the coconut and oatmeal absorb some of the moisture. 

Roll into balls, 1½-inches in diameter and then roll each ball in coconut to coat. You will see on the video how I coat the snowballs in coconut. 

Place the snowballs in an airtight container. As you can see these beauties didn't make it to a container as they are being placed on trays and frozen for Christmas. If you're not watchful some people will eat them straight from the freezer!

When ready to serve place the snowballs in a pretty container and let the festivities begin. Of course, if they are to be eaten at home at one's own pleasure the container will do.
