Cheesy Ranch Tater Tot Casserole with Veggies
Cheesy Ranch Tater Tot Casserole makes a wonderful family or potluck dish!
Here's a new tater tot casserole that's quick and so delicious. I must warn you it's not the healthiest option on the menu but it's so tasty a little serving now and then should be all right. (My opinion. Ha, ha.) Actually, this would make a great potluck dish because then you wouldn't have any leftovers to tempt you back at home. Or serve it when you have company and can share this rich and delicious casserole.
Serve it with a big green/vegetable salad, a big pot of baked beans and a few dinner rolls for a complete meal.

Cheesy Ranch Tater Tot Casserole with Veggies
Preheat the oven to 375 degrees. Grease a 9×13-inch baking dish.
- 1 (800 gram) bag of frozen tater tots
- 1 cup ranch salad dressing
- ½ cup sour cream
- ¼–½ cup finely diced onion
- 1 cup diced sweet peppers (green, red, yellow, etc.)
- ½ cup cooked, sliced mushrooms (may use fresh or canned)
- ½ teaspoon salt, or to taste
- ¼ teaspoon pepper, or to taste
- 2 cups shredded cheddar cheese
- 1 cup cooked and diced veggie bacon or veggie breakfast sausage, optional
- ¼ cup chopped green onions, optional
Preheat the oven to 375 degrees. Grease a 9×13-inch baking dish.
In a large bowl, mix the sour cream and ranch dressing. Add the onions, peppers, mushrooms, salt and pepper. Mix thoroughly with the frozen tater tots to coat.
Spread half of the coated tater tots evenly in the prepared baking dish. Sprinkle half of the shredded cheddar cheese and diced veggie bacon, if using, on top. Repeat with the remaining tater tots, cheese, and veggie bacon.
Bake in the preheated oven for 35-40 minutes, or until the cheese is bubbling and the tots are golden and crispy.
Remove from the oven and let cool for 5 minutes. Sprinkle with chopped green onions if desired.
Makes 8 servings.
