Banana Spice Cake

A tasty, moist banana cake with all the warm flavours of autumn. A real family favourite. A very good cake!

I have a million bananas to eat and bake with! Well, not quite a million but with my limited freezer space it may as well be a million. How did this happen, you may ask? I bought them. I bought what I thought was a $5 bag of bananas on Flashfood. Pictures can be very deceiving. When I went to pick up my bargain I almost fainted when the cashier brought out an overflowing case of fairly ripe to over-ripe bananas. They were piled up high over the top of the box. She actually couldn't lift them and had a large, muscular produce man carry them to my cart. I tried to give some away in the parking lot but only succeeded in getting rid of four bananas! When I got to Peter's house they took a few and, Vicki's sister, Elizabeth took a bag of them but I still had a case of them left. I barely got rid of the overflow. 

This is only part of the case. I had already put 2 large bags of bananas in the trunk of the car!

When I got home I sorted them from good to bad and froze the very ripe ones, either mashed or whole. I gave away another bag full and we ate the best ones until they started to die in front of our eyes. Then I froze the nearly dead ones. We've been eating the frozen ones in smoothies and I've made a batch of Banana Chocolate Chip Muffins. And today I made this Banana Spice Cake. It is very good. I'm going to spread half a recipe of this simple cream cheese frosting over the top and take it to the church potluck tomorrow. Just a heads up to anyone coming to our house or church for dinner or potluck--expect banana desserts. 🍌

This Banana Spice Cake is quite easy to make as you put everything in a bowl and mix it up. No creaming or folding necessary. It is quite versatile as it can be made in a bundt pan, layer pans or a rectangular pan.

Banana Spice Cake
  • 2½ cup sifted cake flour (see note below)
  • 1⅔  cups sugar
  • 1¼  teaspoons baking powder
  • 1¼  teaspoons baking soda
  • 1 teaspoon salt
  • 1½  teaspoons cinnamon
  • ¾ teaspoon nutmeg
  • ½ teaspoon cloves
  • ⅓ cup very soft shortening, butter or margarine
  • ⅓ cup oil
  • ⅔ cup buttermilk or soured milk
  • 1¼ cups mashed ripe bananas
  • 2 eggs
How to make it:
Preheat oven to 350 degrees. Grease and flour or pan-spray one bundt pan or three 8-inch or two 9-inch layer cake pans or a 9x13-inch pan or dish.

Place dry ingredients in a large mixer bowl. Sift or mix the ingredients together. Add shortening, buttermilk and bananas. Mix gently on low until the dry and wet ingredients are incorporated. Beat at medium/high speed for 2 minutes, scraping the sides and bottom of the bowl occasionally. Add eggs and beat 1 more minute. 

Turn batter into a well greased and floured or pan-sprayed pan(s): bundt pan or three 8-inch layer pans or two 9-inch layer pans or a 9x13-inch dish or pan. Bake in 350 degree oven for 45-50 minutes for the bundt cake or 30 to 35 minutes for layers or 35-40 minutes for the rectangular pan, or until cake springs back when lightly touched. The 9x13-inch cake can be frosted and served from the pan.

Let cake cool in pan about 10 minutes. Turn out on baking rack and let cool before frosting or storing.

Makes: 1 bundt cake or one 8-inch or 9-inch layer cake or one 9x13-inch cake.

Note: If cake flour is not available replace with all-purpose flour and corn starch. After measuring 2½ cups all-purpose flour, remove 5 tablespoons and replace with 5 tablespoon cornstarch. Sift or mix together well. 

Preheat oven to 350 degrees. Grease and flour or pan-spray the pan you are going to use. I used a bundt pan today.

Place dry ingredients in a large mixer bowl. 

Sift or mix the dry ingredients together. 

Add shortening, buttermilk and bananas. Mix gently on low until the dry and wet ingredients are incorporated. Beat at medium/high speed for 2 minutes, scraping the sides and bottom of the bowl occasionally. 

Add eggs and beat 1 more minute. 

Turn batter into a well greased and floured or pan-sprayed pan of choice.

I used a bundt pan today. Bake in 350 degree oven for 45-50 minutes for the bundt cake. 

Bake the required amount of time or until cake springs back when lightly touched. 

You can see the nice, high rise on the bundt cake.

Let cake cool in pan about 10 minutes. Turn out on baking rack and let cool before frosting or storing.
